Viki Geunes exemplifies how natural talent and passion can lead to culinary excellence without formal hospitality training. Originally trained in industrial sciences, he discovered his true calling in gastronomy, teaching himself the craft. In 1996, he and his wife, Viviane Plaquet, opened their first restaurant, 't Zilte, in Mol, initially focusing on a simple yet refined kitchen. However, Viki’s curiosity and ambition soon led him to embrace innovative cooking techniques.
In 2000, he relocated 't Zilte, refining his contemporary and creative culinary approach. His dedication was quickly recognized, earning him a Michelin star in 2004, a second in 2008, and the prestigious third star in 2021, making Zilte one of only two restaurants in Belgium to hold this elite distinction.
Beyond the kitchen, Viki has shared his expertise in various ways. In 2008, he appeared as a coach on the TV program Keukenrebellen, and in 2009, he published the acclaimed cookbook Just Cooking. In 2011, he moved 't Zilte to the Museum aan de Stroom (MAS) in Antwerp, transforming the dining experience with a stunning interior designed by architect Vittorio Simoni and artist Koen van den Broek.
Family remains a cornerstone of his success. His wife, daughter, and son-in-law, Aaron Moeraert, the restaurant’s sommelier, contribute to the warm and welcoming atmosphere of Zilte. In 2020, Viki led a major renovation, rebranding the restaurant with a sleek modern design and breathtaking city views. His efforts were further recognized in 2023, when Zilte joined the prestigious Relais & Châteaux network, followed by its inclusion in Les Grandes Tables du Monde in 2024, reinforcing its status as one of the top dining destinations in Belgium and beyond.
